Max (my son) and I are already getting ready for the fall festivities. This was one breakfast that Max beat me to an empty plate. Did you know that you can make great french toast with coconut milk? Just substitute regular milk with coconut milk and...TADA...dairy free cuisine! I couldn't even taste the difference. Brown french toast on each side, trim down with your favorite seasonal cookie cutter and there you have it, ONE HAPPY KID! For an extra special treat, top with some cinnamon and sugar and serve with a little dip dish full of maple syrup or apple sauce.

TIP: For those mothers who hate to waste, the french toast scraps left over from your halloween cookie cutter creations are all yours. Bon appétit!
